Council Oak Steaks & Seafood at Hard Rock Hotel & Casino Tampa boasts 278 fine wines on its extensive menu and a remarkably well-trained staff. The restaurant opened in September 2007 to critical acclaim and continues to host some of the world’s best known celebrities, whose names guests can see on the VIP Knife Club wall at the restaurant's entrance. For these reasons among many others, Wine Spectator has bestowed the Award of Excellence upon Council Oak.

When Council Oak opened, they had an intensive six-week training program, in which wine training was a key component. They regularly hold meetings and have wine experts give seminars to the staff members to keep them informed. Each and every food server is educated on wine and regularly tested on this knowledge.
