IBIZA, A GASTRONOMY OF FARMERS AND FISHERMEN

Ibiza is an island well known for its Mediterranean style. And this style is also present in its gastronomy. If you want to know the origins of the authentic Ibizan flavor, then I will tell you the origins of this gastronomy and what are its main dishes.

THE ORIGINS OF THE GASTRONOMY OF IBIZA.

Ibiza is an island that has long been populated mainly by farmers whose main task was land cultivation and fishing. These farmers used all this raw material that they obtained to carry out elaborations that over time have been changing but still retain their island character.

The Mediterranean fish freshly brought from the sea by the different fishermen’s guilds together with the vegetables grown by the farmers constituted the food base of the islanders. Animals such as chickens and pigs still highly valued among the islanders to these days. They are the main source for obtaining the best raw material for different typical preparations such as sofrit payes or sobrasada.

TYPICAL DISHES OF THE GASTRONOMY OF IBIZA:

BULLIT DE PEIX

This dish has evolved over time but its base remains the same. It consists of boiling different species of fish, all indigenous to the Mediterranean, to get all its flavor and then transfer it to the potatoes and to the rice. This dish consists of two parts. The first serving a tray with all the fish and potatoes previously cooked and baked. This is where we savour the authentic Mediterranean flavor. To finish we have a thin layer of rice made with the broth produced by the fish.

ARROZ DE MATANZA

This dish is very appreciated in the island. There is even an annual contest where different local chefs compete to demonstrate who makes the best arroz de matanza. In which different groups of residents compete before a jury to make the best arroz de matanza. This dish is a soupy rice made with pork, slaughtered the same day. They also add meat and chicken broth raised on the island, Nowadays some chefs even use cuttlefish and fish.

SOFRIT PAYES

The following dish was prepared to accompany the hard days of slaughter. We are talking about a forceful dish where we mix different meats; pork, chicken and lamb are usually the most traditional, along with sausages such as sobrasada and butifarra. A traditional dish of the gastronomy of Ibiza that still lingers on the tables of the island.

SOBRASADA

An element that over time has gained reputation and relevance in the gastronomic field is undoubtedly the traditional Ibizan sobrasada. This is due to the fact that the sobrassada acquires an incomparable flavor thanks to the humid climate of the island. Nowadays sobrasada is so appreciated that it is used as the main element in different elaborations of haute cuisine.
